Skinny Chocolate & Fooled Ya Pizza from Trim Healthy Mama


Making homemade chocolate is quite simple. All you need for a basic chocolate bar recipe is coconut oil, sweetener, and cocoa powder. Now, you can IMPROVE the quality and benefits of it by using REAL coconut oil from a trusted source like Garden of Life or Tropical Traditions. By using a coconut oil (you know, that actually TASTES like coconut) you gain all sorts of nutritional value, but you can still enjoy it by using a brand from Walmart that doesn't taste like coconuts. It depends on your financial ability. I used the cheap brand from Walmart.

When I made the recipe from Trim Healthy Mama I was on phase 1 of the Maker's Diet. No sugar except for a Stevia type- and then only a little amount was allowed. Enter Truvia. Truvia comes from the Stevia plant and is gluten-free, does not effect the glycemic index and is diabetic friendly, and is natural.

Now, you may be wondering why I didn't use a natural sugar such as honey or maple syrup. I'm sure you could use those, too, but the whole point of THM is to eat in a way that it doesn't cause your blood sugar to spike (too much of a blood sugar spike will cause fat to be stored causing weight gain). Yes, honey and maple syrup are healthy and could be enjoyed from time to time, it's best to eat in a way that keeps your blood sugar in line- diabetic or not. In THM they would rather you give your children the honey because they are still growing and are not insulin resistant yet. Of course, Truvia is safe for the whole family.

Anyway.... back to chocolate. I made their recipe and the girls LOVED it! For me, it wasn't sweet enough for me, but I've got a few ideas on how to tweak it in the future. It wasn't bad and did satisfy my chocolate craving, but maybe a little sweeter would be good.

The second recipe I tried was their Fooled Ya Pizza. Again, we were in the Maker's Diet and any flour or yeast wasn't approved. Pizza is a favorite though and I thought it might be worth trying.

Fooled Ya Pizza has a pizza crust using cauliflower and cheese.

Basically, you steam the cauliflower and drain it REALLY good.
Mix mozzarella cheese, salt, pepper, Italian seasonings, and egg whites together. Press on a waxed paper pizza pan or cookie sheet!


After baking the "crust", we topped it with some pizza sauce, a sprinkle more of cheese, and turkey pepperoni! I had a great helper!


Serve it with a yummy salad and you can have a healthy "pizza" dinner! My kids gobbled it up! Definitely a plus.


  Here's what I'm seeing.... Ways to incorporate a better way of eating. You can enjoy a low carb pizza that tastes good, even if you still opt to visit your favorite pizza joint! You can still buy candy bar from the store, but you can also make chocolate using healthy ingredients and ones that won't spike your blood sugar.

On this journey it's about finding a good balance and doing things that are good for your body and life.
